Dinner for 8.

Joe, Abby, Jenno, Michael, Katie, and Ben came over tonight for dinner. Three of them were going to see a show in the theatre across the street, and it seemed logical for everyone to eat here, rather than try to pack into the uber-crowded restaurants around the theatre.

I made up a couple of things for everyone. (With Jeff's help.) Joe and Abby brought popcicles, Michael/Katie/Ben brought wine and soda pop.

While waiting for everyone to show up we had some pita, hummus, olive tapenade, olives, carrot sticks, and cherry tomatoes for everyone to snack on.

Dinner was a citrus and fennel salad, a strawberry and spinach salad, asparagus, sourdough rolls and tofu stuffed jumbo shells with spinach added in. (I'm proud to say I gave Jenno her first taste of tofu and nutritional yeast.)

For "dessert" we had some oatmeal peanut butter cookies although a lot of those were eaten before dinner was actually served. And by "served", I mean buffet-style with everyone sitting on the living room floor. I might have my great-grandmother's snappy serving dishes, but I don't have the dining room space.

Disclaimer: Real butter was set out because I still have some in my fridge and my friends are welcome to eat it even if I'm not. I know it's NOT VEGAN but I'd rather they eat it than just throw it out.

AND, I can't remember the last time I knowingly and voluntarily ate spinach. :-) But I was full aware that's what it was when I took it. Figured I'd give it a shot with the strawberries and such.
