Last night Jeff and I went out for dinner to the restaurant next door. Tex Tubb's Taco Palace is a relatively new restaurant. On any given night the owner and his country band might be playing in the bar, and if not, there's a healthy selection of country western 8-tracks playing.
I had been mulling over the 3 taco options for vegetarians and noticed they added a new one that's vegan. It wasn't bad. Broccoli, veggie slaw, cilantro and pico de gallo. Admittedly, it's not as tasty as the mushroom taco (which I believe is vegan if you have them leave out the feta) and the broccoli is marinated in something spicy before cooking, so it has a very different flavor. With the guac and chips though it was a very nice meal.
Jeff opted for a selection of seafood tacos. The shrimp, blackened tilapia, and grilled mahi mahi. I think Tex's non-veggie tacos are tastier than their veggie options, I must admit, but I appreciate the effort to have veggie options and it appears with a fourth taco on the list that they are expanding. Tex's other restaurant has some very nice vegetarian option on it's menu as well. It's not their fault I don't care much for daikon (which is similar to carrot) which they serve roasted in a taco, or black beans which go in their tacos and burritos.
I'm still waiting to find out if their refried beans have lard or other animal products in them. I haven't tried them yet, but it would be nice to hear that they're a viable option as well.
