It's been about P.F. Changs, Tex Tubb's, Monty's, Panera, Noodles...
So now, here it is, Sunday night and I haven't been grocery shopping. What to eat?
In the list of things that take 10 minutes or less and that I can scrounge out of the fridge comes tonight's dinner for one. A slice of eggplant, dipped in soy milk and dredged in bread crumbs, sauteed in a pan of olive oil. Topped with some commercial pasta sauce in the fridge from earlier in the week, and served with a mixed green salad and vinaigrette, toasted French bread, and Earth Balance Spread.

Not bad. The egg plant deserved more attention and preparation, but I was hungry NOW.
