Whole wheat tortillas, with Fajita-Fu (marinated tofu), sauteed yellow bell pepper, zucchini, tomato, corn and black bean salsa, and lettuce.

Next time I'm going to marinate my own firm tofu (rather than pay extra for the ready-made kind) in soy, cumin, pepper, etc, but for a first run to see how Jeff likes tofu in a taco I think this was a good, speedy option.
Tomorrow is Meg's birthday, so perhaps it will be another meal out. If not, we're doing up a chickpea and potato curry over brown rice.
